Red Pepper Round Steak
1 (1 lb) round steak
½ tsp salt
1/8 tsp pepper
2 tbsp chopped onion
2 tbsp vegetable oil
1 large sweet red
pepper, chopped
1 beef-bouillon cube
1 packet of
seasoning mix from Ramen Beef Noodles
1 cup hot water
1 (14.5 oz) can
tomato wedges
1 tbsp cornstarch
¼ cup water
2 tsp soy sauce
Hot cooked rice
Partially freeze
steak; slice diagonally across the grain into ¼-inch wide strips. Cut strips into 2-inch pieces. Sprinkle with salt and pepper. Saute steak and onion in oil in a skillet
until steak is browned. Add chopped red
pepper. Dissolve bouillon cube in 1 cup
hot water; add to steak with the Ramen noodle seasoning and bring to a
boil. Cover and reduce heat, simmer 40
minutes. Add tomatoes.
Combine cornstarch,
¼ cup water and soy sauce, stirring well.
Stir into steak mixture. Bring to
a boil and cook 1 minute, stirring constantly. Serve over rice. Serves 4.
