Copy Cat Cool Latte

Copy Cat Cool Latte

Coffee Base:
1/2 cup coffee grounds
1 1/2 cups boiling water
1/2 cup sugar
1 tsp vanilla

Cool Latte:
1/2 cup coffee base
10 ice cubes
1/2 cup cream, half & half or low-fat milk

For the Coffee Base:  Pour boiling water over the coffee grounds in a glass container (I use a French Press).  Let water and grounds sit until coffee comes to room temperature.  Strain the grounds from the brewed coffee.  Heat the coffee in the microwave for 2 minutes or on stove top.  Add 1/2 cup sugar and vanilla to coffee and stir.  Store in a sealed glass container in the refrigerator.
For the Cool Latte:  Put 1/2 cup of Coffee Base in blender.  Add about 1- ice cubes a couple at a time, blending until it looks like slush.  Add milk and blend for about 10 seconds.  Pour into a glass and drink with a straw.

This is a pretty darn good knock off!

Salted Caramel Mocha

2-3 tsp Hershey's Special Dark Chocolate syrup
1-2 tsp Caramel syrup (I prefer Ghirardelli's)
Pinch Fleur de Sel
3 heaping tablespoons Coffee Mate
Hot Coffee
Whipped Cream

Put the chocolate and caramel syrups in a large mug.  Add the salt and Coffee Mate then slowly stir in the hot coffee until mixture is combined, leaving room at the top for the whipped cream.

Delicious!  Better than Starbucks.  If you want it sweeter, add 1/2 tsp sugar (or to your taste)

Jennifer's Wedding Sangria

Jennifer's Wedding Sangria!

1 1/2 cups blackberry brandy
1 large can frozen lemonade concentrate
1 1/2 cups pineapple orange juice
1 cup cranberry juice cocktail
4 (750 milliliter) bottles merlot
1 cup triple sec
1 lemon, sliced into rounds
2 navel oranges, sliced into rounds
1 lime, sliced into rounds
1 fresh pineapple, peeled, cored and sliced
1 pint fresh strawberries, hulled and halved
1 cup white sugar
Sprite or Club Soda(optional)

Combine all ingredients except the Sprite in a 3 gallon beverage dispenser (available at Bed Bath & Beyond...we bought the one with a cooling chamber so the ice doesn't dilute whatever you're serving!) Fill the dispenser chambers with ice and let the mixture stand for several hours before serving. Top each serving with a splash of Sprite if desired.

We served this at Jen's wedding rehearsal and it was really good! I preferred it with the Sprite. I liked it so well that I might just start mixing up a small pitcher and keeping it in my fridge :-)

For the record, I do not like wine...but this stuff is GOOD!!!

Caramel Apple Cider

1/2 tsp vanilla extract
2 cups apple juice, or apple cider
Pinch of cinnamon or a cinnamon stick to garnish

Stir together the brown sugar and whipping cream in a small saucepan.  Cook, stirring constantly, over medium heat until it starts to bubble.  Stir in vanilla and apple juice.  Cook 10 minutes, stirring often.  Garnish with a sprinkle of cinnamon or pop a cinnamon stick into each cup.

This is a seriously delicious treat!  Tastes like apple pie in a mug!  I found the recipe at justapinch.com and I am so glad I tried it.  :-)

Brazilian Lemonade

I don't know why they call this lemonade, when it's made with LIMES! But it's really good! Might be the 2nd best "lemonade" I've ever had!

Brazilian Lemonade

2 limes
1/2 cup sugar
3 Tbsp sweetened condensed milk
3 cups water
Ice

Wash limes thoroughly. Cut off the ends and slice into eight wedges. Place limes in a blender with the sugar, condensed milk and water.

Blend in an electric blender, pulsing 5 times. Strain through a fine mesh strainer to remove rinds. Serve over ice.
