This smells wonderful and tastes great!

Oriental Slow Cooked Pot Roast

Oriental Slow Cooked Pot Roast

1 large onion, chopped
3-4 lb sirloin tip roast
1/2 cup low-sodium soy sauce
1/2 cup water
1 tsp ginger
2 Tbsp corn starch

Place onions and roast in crock pot. Combine soy sauce, water and ginger and pour over the meat. Cook on low 8 hours. Dissolve cornstarch in 2 Tbsp water and stir into meat juices to thicken.

Slice meat and serve over hot, cooked Rice with Steamed Broccoli. Delicious!

Italian Crockpot Beef

Italian Crockpot Beef

3-5 lb. rump roast
1 packet Good Seasons Italian dressing mix
1 packet Au Jus gravy mix
2 tsp. Italian Seasoning
1 cup water
1/3 cup sliced pepperoncini peppers

Place the beef in a crockpot. Combine the remaining ingredients and pour over the meat. Cook on low for 6 to 8 hours or until very tender. Shred and serve on rolls or hamburger buns.

Loved the beef!  Served on Soft Onion Sandwich Rolls with hredded lettuce, slice tomatoes, thinly sliced red onion, crisp bacon slices, Swiss cheese slices and Horseradish Ranch Sauce.  The sauce was good, but these would have been just fine with plain old bottled BBQ Sauce!

Crockpot Braised Short Ribs

Crockpot Braised Short Ribs

3 tbsp olive oil
4 lbs beef short ribs
Salt, Pepper and Garlic Powder to taste
2 onions, cut into quarters
1 tbsp Worcestershire Sauce
1 cup red wine
32 oz beef broth

Heat oil in a large iron skillet. Season the short ribs with salt, pepper and garlic powder and brown well on all sides in the hot oil. When browned, place the ribs in a large crock pot and add remaining ingredients. Cover and cook for 6 to 8 hours or until the ribs are very tender.

Skim off the fat and thicken gravy if desired. Good stuff!

Crockpot Beef with Red Wine Gravy

Crockpot Beef with Red Wine Gravy

Beef, your choice, enough for 4 servings
Garlic Salt & Pepper
3 tbsp bacon grease
3-4 slices cooked and crumbled thick cut bacon
1 packet Lipton Onion Soup mix
1 tsp rubbed sage
1 can cream of mushroom soup
1/2 can water
1 cup red wine

Season the beef with garlic salt & pepper and brown well on all sides in the bacon grease. Meanwhile, combine the remaining ingredients in your crockpot. Add the browned beef and stir. Cover and cook on low all day. This gravy is awesome and the beef is so tender!

You can make this with just about any kind of beef you have on hand...a roast, stew meat, round steaks, whatever! Tonight I used a piece of sirloin cut into 4 serving sized pieces.

Served with Mashed Potatoes and Brown Sugar Glazed Carrots.

Butter Beef

Butter Beef

3 pounds cubed beef stew meat
1/2 cup butter
1 (1 ounce) envelope dry onion soup mix
1/2 cup water

Place the beef and butter into a slow cooker. Sprinkle the onion soup mix over. Add water. Cover, and cook on Low for 8 hours, or High for 4 to 5 hours. Stir once or twice.  This is wonderful over egg noodles.

Best Beef Dip Ever (French Dip Sandwiches)

Best Beef Dip Ever (French Dip Sandwiches)
This makes the best beef for a French Dip Sandwich I ever tasted! Even John loved the beef!

4 pounds beef chuck roast
1 tablespoon minced garlic
1 tablespoon dried rosemary
3 bay leaves
1 cup soy sauce (I use Low Sodium Soy Sauce)
6 cups water

Place roast in slow cooker. Season with garlic, rosemary, and bay leaves. Pour in soy sauce and water. Cook on low setting for 6 to 10 hours. Unlike most roasts, the longer the better.  Serve the beef on lightly toasted sub rolls and dip in the au jus!  From allrecipes.com

Sweet and Sour Meatballs

Sweet and Sour Meatballs

12 oz jar sweet and sour sauce
1/4 cup brown sugar
1/4 cup lite soy sauce
1/2 teaspoon garlic powder
1-2 lbs frozen meatballs
1 red bell pepper, cut into chunks
1 green bell pepper, cut into chunks
1 onion, cut into chunks
20-oz can pineapple chunks, drained

Combine the sweet and sour sauce, brown sugar, soy sauce and garlic powder in a crock pot and stir well.  Add the meatballs, bell peppers, onions and pineapple chunks and stir gently.  Cover and cook on low for 7-8 hours or on high for 4-5 hours.

Serve over hot cooked rice.  Yum!  If you like spicy, add a little Sriracha to the sauce.

This recipe can also be baked in a covered casserole or pan in the oven at 350^F for about 1 1/2 hours.

Or, if you're in a hurry you can place the meatballs in a large Dutch Oven or Pot and cover them with water.  Bring to a boil and cook about 15 minutes.  Drain.  Add the remaining ingredients to the pot and bring to a boil, then reduce the heat to simmer for about 20-30 minutes.

Cuban Style Slow Cooked Pork

5-6 lb. Boston Butt
1 tsp Adobo seasoning with Pepper
2 packets Sazon with Cilantro and Tomato
1 tbsp minced roasted garlic
1 large red onion, halved and cut into thick slices
3 or 4 shakes Liquid Smoke
1/4 cup water

Rinse the pork butt and place in the crockpot. Sprinkle with Adobo and Sazon seasonings. Smear minced garlic over the top and add the sliced onions. Shake on the Liquid Smoke and pour the water into the bottom of the crockpot. Cover and cook on high for about 6 hours.

Remove the pork and let cool enough to handle, then remove the fat, tearing the meat into chunks.

Yummy!  Excellent with Black Beans and Rice.

Cafe Rio Chicken

2 lbs chicken breasts
1/2 a small bottle of zesty italian dressing
1/2 Tbsp. minced garlic
1 pkt ranch dressing mix (mixed with 1/2 cup of water)
1/2 Tbsp. chili powder
1/2 Tbsp. ground cumin

Place all ingredients in a crock pot. Cook on High 5-6 hours OR on Low 8 hours. Shred with fork and serve in salads, burritos, tacos…etc. You can also double or triple this to make extras for freezing. Then simply thaw and reheat for a lickity split meal.

This is really good and really easy!  The chicken was juicy, tender and delicious!  I served these Burrito style tonight but it would be great in a salad or with rice & beans!
