Chili Bean Roast
3-3.5 lb beef round
tip roast
1.5 tsp spicy brown
mustard
2 tbsp brown sugar
1.5 tsp chili powder
½ tsp salt
¼ tsp pepper
1 can Mexican style
chili beans, undrained
1 cup chopped onion
Trim excess fat from
roast. Spread mustard on all sides of
roast. Combine sugar, chili powder, salt
and pepper; rub on all sides of roast.
Place roast in a Dutch oven; top with beans and onion. Cover and bake at 350^ for 2.5 hours or until
done. Serves 8
