Corn Muffins with
Bacon and Cheese
1 box Jiffy Corn
Muffin Mix
1 tsp smoked paprika
1 egg
1/3 cup milk
1 tbsp minced chives
3 tbsp finely diced
sharp cheddar cheese
2 tbsp bacon bits
Preheat the oven to
400^F. Spray muffin pans (this recipe makes about 1/2 dozen) with Pam.
Combine muffin mix,
paprika, egg and milk and mix by hand until just combined. Stir in the chives,
cheese and bacon bits and spoon into muffin pans. Bake about 15-20 minutes or
until done.
Tasty. A little
dense, but quite good!
