Blueberry Orange Bread
1 cup bran cereal,
crushed
¾ cup water
1 Tbsp grated orange
rind
¼ cup orange juice
½ tsp vanilla
2 cups all purpose
flour
1 cup sugar
1 ½ tsp baking
powder
½ tsp salt
1 large egg
2 Tbsp vegetable oil
1 cup frozen
blueberries, thawed
Stir together first
5 ingredients in a large bowl; let stand 10 minutes or until cereal
softens. Stir in flour and next 6
ingredients just until dry ingredients are moistened. Gently fold in blueberries. Pour batter into a greased 9x5” loaf pan.
Bake at 350^ for 1
hour or until a long wooden pick inserted in the center comes out clean. Cool on a wire rack 10 to 15 minutes; remove
from pan, and cool completely on wire rack.
